'I cooked Meghan Markle's courgette pasta and it was surprisingly easy and flavoursome'

Meghan Markle's friend once convinced her to slow cook courgettes into a "filthy, sexy mush" and toss with pasta - so I tried it out, with interesting results.

Meghan Markle will soon be revealing more details for her upcoming Netflix series which aims to celebrate "joys of cooking, gardening, entertaining, and friendship", and as I am anticipating new recipes to follow from the Duchess of Sussex, I thought I would experiment with her existing 'tried and tested' recipe.

I had heard a lot about Meghan's love for courgette pasta, which Americans refer to as 'zucchini'. Speaking to food outlet Delish, Meghan once described how a friend convinced her to slow-cook courgettes until they break down into a "filthy, sexy mush".

Meghan went on to describe the dish: "The sauce gets so creamy, you'd swear there's tons of butter and oil in it, but it's just zucchini, water and a little bouillon."

Since her interview in 2018, the internet has reacted with a collective: "That's it? That's all there is to it?"

In fact there are only a few main ingredients required: Courgettes, vegetarian stock cubes, garlic, and onion.

To garnish, you need freshly grated parmesan cheese, as well as a sprinkle of red chilli flakes - if you can take the heat.

Ingredients (for two persons)

  • 4 courgettes
  • 1 yellow or red onion (depending on preference)
  • 3 garlic cloves
  • 1 vegetarian stock cube (dissolved in 250ml water)
  • parmesan cheese
  • red chilli flakes
  • salt and pepper
  • pasta (of your choice)

Now, it’s worth keeping in mind that when Meghan mentioned this dish it was in the middle of an interview and she didn't appear to go into further details - so we don’t know the exact recipe she uses. But Meghan's fans, the internet, and budding chefs have come together to recreate the dish and add a few of their own ingredients.

What is immediately apparent in this recipe is how easy the dish is to make. The first step is to chop the courgettes, onions and garlic into small chunks and then fry on a low heat in a pot for five minutes until cooked, or the vegetables have slightly browned.

The next step is to boil the water and pour 250ml into a heat-proof jug.

Dissolve the stock cube in the water, and pour the mixture straight into the pot with the vegetables. Now for the easy part - time to let the vegetables simmer on a very low heat for two hours, stirring occasionally and keeping an eye on water levels.

I would recommend seasoning with pepper at this stage, to allow the flavours to come together nicely. Eventually, the courgettes will turn into a mushy mixture - but you would be forgiven if you thought it looked like baby food.

I personally stopped the cooking process until the liquid had dissolved and the courgettes had a slightly firmer texture than other food bloggers recommended - so all the flavour, with a bit of a crunch.

For the pasta, it is up to you which you prefer - dried or fresh, penne or farfalle. I chose fresh spaghetti and cooked it according to the instructions specified.

After draining the pasta, I poured the hot courgette mixture onto the pasta and gave it a good stir. I garnished the pasta with fresh parmesan and chilli flakes - but I would also recommend adding a touch of basil.

This simple, straight forward recipe is perfect for if you are on the go, or require a comforting dish after a long day at work. I can see how the dish has garnered attention for its delightful, simple flavours and nutritious profile.

For Meghan Markle, I understand how the dish represents a perfect blend of health and ease. In my opinion, the Duchess's courgette pasta recipe aligns perfectly with her overall approach to health and wellness. It’s easy to prepare, making it ideal for her busy lifestyle.
