Many took to Twitter to vent their frustration at the Channel 4 programme, with some saying that they were "out of order".
As the time approached, hosts Tim Lovejoy and Simon Rimmer were chatting to guests at the table including Rick Astley, band Busted and actress Chanel Cresswell.
However, when the clock struck 11, chef Simon, 53, introduced a clip from a new documentary.
Instead of observing the tradition, some scenes from Last Heroes of the Somme - which airs this evening - were shown.

Two minutes silence? Why was it not observed? Out of order Sunday Brunch!
Two people tweeted: "How poor Channel 4, Sunday Brunch didn't stop for 2 minutes silence,"(sic) and "Two minutes silence? Why was it not observed? Out of order for a live show. #sundaybrunch."
Another person continued: "@SundayBrunchC4 as a live show, is there a reason why you couldn't do the 2 minutes silence at 11 o'clock #RemembranceSunday #SundayBrunch?"
Someone else, responding to Pixie Lott's gushing comments about Busted, added: "@PixieLott @SundayBrunchC4 @Busted shame about the 2 mins silence?"

Meanwhile, Sunday Brunch did ask fans to send in photos of loved ones who had served in the Armed Forces, which were shown throughout the broadcast.
The controversy came just hours after the BBC defended their decision to air an interview with Marine Le Pen on The Andrew Marr Show on Remembrance Sunday.
Express.co.uk has contacted a spokesperson for the show regarding these reports.
Sunday Brunch continues next weekend at 9.30am on Channel 4.
