Mixed bean salad with a chilli and coriander dressing
Serves 2. 227 calories/5.5g fat/0.5g saturated fat
Ingredients:
150g (5oz) fresh frozen soya beans
150g (5oz) green beans, trimmed
150g (5oz) sugar-snap peas
150g (5oz) cherry tomatoes, halved
4 spring onions, finely chopped
2 tbsps chopped fresh coriander
3 tbsps rice-wine vinegar
3 tbsps sweet chilli dipping sauce
Method:
Place the soya beans in a large pan of boiling water for 3 minutes. Add the green beans and peas then cook for 2 minutes. Refresh under cold running water then drain well.
Place the beans and peas in a large bowl then add the tomatoes, spring onions and coriander.
Whisk together the vinegar and sweet chilli sauce then drizzle over the vegetables. Toss well and serve.
