Crayfish and rocket cocktails
CRAYFISH and rocket cocktails are a stylish twist on the classic prawn cocktail. Serves 6 as an appetiser or 4 as a starter.
INGREDIENTS
2 tbsps mayonnaise
2 tbsps tomato ketchup
1 tsp Tabasco sauce
Salt and pepper
300g (10½oz) crayfish tails
50g (2oz) rocket leaves
1 tbsp parsley
½ lemon
METHOD
• In a bowl, combine the mayonnaise, ketchup, Tabasco and a pinch each of salt and pepper then mix well. Add the crayfish to the bowl and mix everything to coat them in the sauce.

• Fill the bottoms of the glasses with rocket leaves and top the salad with the crayfish mixture. Sprinkle with parsley then serve with a small wedge of lemon on each cocktail and buttered brown bread if you like.
