Five-ingredient Lotus Biscoff cheesecake for one recipe leaves everyone drooling

Cookbook author Eloise Head provided her TikTok followers with a simple five-ingredient recipe for Lotus Biscoff cheesecake to enjoy alone.

Stuck at home on your own and in the mood to self-indulge?

Why not spoil yourself by making a Lotus Biscoff cheesecake for you and you only? The recipe is simple and only requires five ingredients, as detailed by food-loving TikTok user, Eloise Head (@fitwaffle).

Eloise took to her account earlier this week to provide a step-by-step guide to create the sweet treat - and it left her 5.8 million followers desperate to try it out for themselves. "Here's how to make a one-pot Biscoff cheesecake with just five ingredients," she began in her clip that has been viewed more than 250,000 times.

The first step saw Eloise use a rolling pin to crush Biscoff biscuits inside a sealed sandwich bag, before pouring the resulting crumbs into a ramekin, or small bowl. She then mixed in 2 teaspoons (10g) of melted butter until it combined.

After pressing down gently to create the biscuit base, she placed the ramekin in the fridge to allow it to set. Eloise then gathered 115g of cream cheese, one tablespoon of icing sugar and 20g of Biscoff spread, and whisked until the three combined too.

"Scoop it onto the biscuit base and smooth it out" she continued, before pouring 10g of melted Biscoff spread on top. Eloise added: "Smooth it out then add half of a Lotus biscuit to finish then leave it in the fridge for an hour. Serve cold and enjoy!"

One of her follows responded in excitement: "Right I’m making this." Another added: "Oh this looks nice I used one of your recipes once and my friends loved it."

A third person declared: "I love cheesecake, I can't stop thinking about it." While a fourth simply said: "This looks so good."

Earlier this year Eloise released the third cookbook under her Fitwaffle branding, titled Fitwaffle's No-bake baking. "From cheesecakes, ice cream and truffles to desserts made on the hob, in a microwave and air fryer, not one of these recipes needs you to turn on your oven," she penned.

The book features 100 recipes, many of which also use five ingredients. "You’ll find brand-new recipes using popular flavours, as well as highly-requested fan favourites," she proudly added. "There are even no-bake brownies, cookies and cakes, plus 10 savoury recipes – so you’ll find something for everyone."
