'Perfect' burrata ravioli pasta salad that's ideal for lunch - 7 ingredients

When you're craving something delicious for lunch that'll keep you satisfied until dinner, it can be difficult to know what to go for. 

Many people often fall into the trap of eating the same dull sandwich or salad for lunch each day. Or if you're out and about, grabbing something from a shop or cafe each day can end up being pretty hard on your wallet. 

This is why it's useful to have a few quick and easy preppable recipes up your sleeve for when lunchtime rolls around. And one dish, which was recently shared by Aldi on social media, certainly ticks all of these boxes. 

Taking to TikTok earlier this week, Aldi came to the rescue with some major lunch inspo in the form of a burrata ravioli pasta salad packed with flavour and perfect for when you need something satisfying and healthy.

The recipe was created by food influencer Bec's Bites, who hailed it as 'the best' pasta salad recipe. Not only is it perfect for taking into work for lunch, it's also delicious enough for picnics, BBQs or anything else that you might have planned.

It takes a matter of minutes to throw together as well, using just seven simple ingredients, but don't let the lack of effort fool you. After posting the recipe on social media, the comments were soon full of people who were keen to try it out.

"That looks so nice, colourful and full of goodness!" someone said, while another raved: "Perfect WFH lunch."

Ingredients

  • 2 x packs Aldi Tomato & Burrata Ravioli (cooked and drained)
  • 1/4 pack Aldi Lemon and Herb Olives
  • 1/2 pack Aldi Milano Salami Slices
  • 1/2 jar Aldi Specially Selected Green Pesto
  • 3 medium tomatoes
  • 1/2 pack basil leaves
  • 30g Aldi Specially Selected Parmigiano Reggiano, finely grated

Method

  1. Boil the kettle and put the ravioli on to boil, according to the packet instructions.
  2. Chop up the olives, salami, tomatoes and basil leaves and place them in a large bowl.
  3. When the pasta has cooked and cooled down, add this to the bowl too, along with the pesto and parmesan. Give everything a good mix together and you're ready to serve.
