Ingredients
- 125 g fresh lasagne sheets
- Two spring onions
- 80 g spinach
- 60 g smoked salmon (2 slices)
- ½ a lemon
- Five g Parmesan cheese
- olive oil
- One tablespoon cottage cheese
- optional: extra virgin olive oil

Instructions
Boil a kettle of water. Slice the lasagne sheets in half lengthways, then cut them into two cm strips using a crinkle-cut knife if available.
Trim the spring onions and finely chop them along with the spinach and half of the salmon. Finely grate the lemon zest and the Parmesan cheese, keeping them separate. Place a 28cm frying pan over high heat.
Once the pan is hot, drizzle in a bit of olive oil and add the spring onions, spinach, chopped salmon, and lemon zest. Scatter the pasta strips into the pan, then carefully pour in enough boiling water from the kettle to just cover the pasta, about 250ml.
Allow it to simmer for four minutes, or until the pasta has absorbed most of the water and a nice sauce has formed, stirring regularly and adding an extra splash of water if needed.
Turn off the heat, squeeze in the lemon juice, stir in the cottage cheese and Parmesan, then season to taste. Gently tear the remaining salmon over the top, and finish with a drizzle of extra virgin olive oil, if desired.
