Peas with lettuce and bacon
PEAS with lettuce and bacon
INGREDIENTS
Serves 4
450g (1lb) peas, fresh or frozen
40g (1½ oz) unsalted butter
4 spring onions sliced
4 rashers smoked streaky bacon chopped
2 gem lettuces shredded
150ml (¼ pint) double cream
2 tsp chopped mint
1 tsp caster sugar
Salt and pepper to taste

METHOD
Melt the butter in a saucepan, add the spring onions and bacon and cook gently for 8 minutes.
Add lettuce, peas and cream, bring to the boil, reduce heat and simmer for 10 minutes.
Add the mint and sugar and cook for a further 1 minute. Season to serve.
