Greek Salad
GREEK salad, also known as village or country salad, is an excellent low-calorie side dish. Easy to prepare and extremely delicious, this Greek salad is a dish regarded as suitable for those following a vegetarian diet. Serves 4.
INGREDIENTS
100ml olive oil
3 tablespoons lemon juice
1 tablespoon Italian dressing mix combination of herbs and seasoning
1 teaspoon oregano
1kg mixed greens
2 medium tomatoes cut into wedges
100g ripe olives
100g feta cheese
1 can anchovy fillets
METHOD
1 In a jar, shake together the olive oil, lemon juice, Italian dressing mix and oregano.
2 In a salad bowl, toss together the greens, tomatoes, and 50g each of the ripe olives and feta cheese, with enough dressing to coat lightly.
3 Garnish with the remaining olives, feta cheese, and anchovy fillets.
