Prawn biryani
Prawn biryani is an easy-to-prepare delicious Malabar recipe. Make any occasion even more special by serving this delicious one-dish meal, which goes really well with a green salad and raita of your choice. Serves 2.
INGREDIENTS
100g rice 2 tablespoons cooking oil
1 cardamom pod
2 cinnamon
2 cloves
1 large onion, long thin slices
FOR GRINDING:
3 garlic cloves, 1 inch ginger, 4 green chillies, a little water grind ingredients into a smooth paste and keep aside
1 large tomato, long thin slices
150g prawns washed
Salt to taste
Pinch of red chilli powder
200ml coconut milk
Coriander, for garnishing
METHOD
1 First wash rice and drain it, set aside.
2 Pour oil into a pressure cooker when hot.
3 Add cardamom, cinnamon, cloves and fry for a second.
4 Add the onion and fry until golden brown. Then add the ground paste and fry until the raw smell goes and the oil separates.
5 Now add the tomato and fry until smooth. Add washed prawns, salt, red chilli powder and mix well.
6 Next add the coconut milk, rice and stir for a second. Allow to bubble. Taste, and close the pressure cooker lid.
7 Switch off the pressure cooker after hearing the first whistle and transfer prawn biryani to a serving bowl.
8 Garnish with finely chopped coriander and serve hot.
