Scalopina boscaiola
A devilishly clever mix of tender meat, wine and purfied vegetables. Serves 4.
INGREDIENTS
4 tablespoons olive oil
12 small pieces of beef steak
1 large onion
150g mushrooms
100ml beef stock
100ml red wine
6 parsnips
6 carrots
French beans
Pancetta optional
Salt and black pepper
METHOD
1 Heat the oil in a frying pan, add the beef and fry until golden. Remove from the pan.
2 Use the juices in the pan to prepare the sauce.
Finely chop the onion, slice the mushrooms and saute for 4 minutes. Add the stock and wine and simmer.
3 Meanwhile, boil the parsnips and carrots then puree them in a liquidiser and serve with the beans, either on their own or wrapped in pancetta.
4 Once the sauce has reduced, return the beef to the pan for two minutes, season and serve.
