Haggis recipe: Perfect the Burns Night 2017 address to the dish with this version
HAGGIS recipes can make or break your Burns Night, which for many revolves around the traditional dish.
The Address to the Haggis is read by a guest or host on the traditional Scottish night that celebrates the life and poetry of the poet Robert Burns.
Burns wrote the poem to express his love for the dish, which on the night is carried in on a silver platter.
The first stanza of the poem reads: “Fair and full is your honest, jolly face, great chieftain of the sausage race!
“Above them all you take your place, stomach, tripe, or intestines: well are you worthy of a grace as long as my arm.”

A recipe for the meal has been created by Craft & Harbour’s husband and wife duo Tony and Anne James. They have created a menu for the night on the 25th.
Clapshot, Haggis & Stornoway Black Pudding with Whisky Sauce
Freshly caught haggis with wonderful Stornoway black pudding and a side of fresh creamy whisky sauce.
Serves 2
For the Whisky Sauce:
Ingredients:
4 tablespoons of butter
1/2 cup finely diced onions
1/2 cup of beef or chicken stock
Pinch of salt
Pinch of ground black pepper
1/4 - 1/2 cup of double cream
A dram of whisky (3 measures)

Method:
Melt the butter in a pan, add the onions and cook until brown
Pour in the dram of whisky and stock, and then simmer
Lightly Whisk in the double cream until you reach a sauce consistency
Season to taste
For the food:
Ingredients:
250g of Black Pudding
250g of Haggis
500g of floury potatoes (i.e. King Edwards or Maris pipers peeled and roughly chopped)
500g of turnip/swede (yellow turnips) peeled and chopped
50g of butter
75ml double cream
Salt and white pepper
2tbsp of fresh chopped chives
Method:
Boil potatoes and swede in separate pans until tender (15-18 mins)
Drain and add together with butter, cream, salt and pepper to make the clapshot
Unwrap black pudding and haggis and dice into large chunks
Heat pan with a tablespoon of sunflower oil

Place black pudding and haggis in pan and cook for 2/3 mins each side
When cooked, drain on kitchen paper
Combine clapshot, haggis and black pudding together and serve on a plate
Sprinkle with chives
Serve with jug of the Whisky sauce, ready to pour
Haggis might turn some stomachs, with ingredients that include various entrails, but this viral recipe also had internet users feeling queasy.
Medium rare chicken is a new dish that has internet users feeling fretting sick after it circulated online. Australian Facebook user Morgan Jane Gibbs posted the stomach-turning dish to the social media site last week.
The “health-conscious” young woman apparently devised the dish with the clean-eating trend in mind.
She wrote: “Just made chicken medium rare chicken strips. They're so good can't believe I've never tried it like this before. Can't wait to dig into this with my homemade salad and veges. #healthy #newyearsresolution #clean #cleaneating.” [sic]
The picture of the dish is enough to make anyone feel a tad queasy, with partially cooked breast sliced into thin sections.
