Caramelised pineapple with mango coulis
Serves 2 - 263 calories/6.7g fat/0.4g saturated fat
Ingredients
2 ripe mangoes, peeled and stones removed
125ml (4½fl oz) orange juice 1 tsp arrowroot or cornflour mixed with a little cold water
2 thick slices of fresh pineapple 15g (½oz) unsalted butter, melted
2 tbsps demerara sugar
Seeds from 2 passion fruits, to garnish
Method
Puree the mangoes and juice in a blender until smooth then place in a small pan and add the arrowroot. Heat gently, stirring constantly, until the sauce begins to thicken.
Place the pineapple on a foil-covered baking tray, brush with butter, sprinkle over the sugar and place under a medium-hot grill for 5 minutes. Serve it warm with the sauce and seeds.
