Pea and feta frittata
Serves 2 - 296 calories/20g fat/7g saturated fat
Ingredients
4 medium eggs
100g (3½oz) frozen peas, defrosted
4 spring onions, finely sliced
2 tsps vegetable oil, lightly beaten
50g (2oz) low-fat feta cheese
Black pepper, to taste
Rocket salad dressed with balsamic vinegar, to serve
Method
Combine the eggs, peas and spring onions.
Heat the oil in a small omelette pan, pour in the egg mix, crumble over the feta, season and cook over a low heat for 4-5 minutes or until the bottom is just set.
Transfer to a preheated grill for 2-3 minutes. Serve with salad.
