Bolognese pasta bake
THIS is a great hearty meal for all the family to enjoy.
INGREDIENTS
Serves 4-6 500g minced beef
1 onion, peeled and chopped 2 carrots, peeled and diced
1 red pepper, deseeded
and diced
1 clove garlic, crushed
1 teaspoon Herbes de
Provence
400g tin chopped tomatoes
Salt and black pepper
350g Penne Rigate
4 tablespoons reduced
fat crème fraiche
125g mozzarella,
drained and chopped
25g Parmesan, grated
METHOD
Fry the minced beef and onion in a large saucepan for 5 minutes until the meat is browned.
This is a real hearty meal
Add the carrot, pepper, garlic and herbs and fry for 2-3 minutes.
Add the tomatoes and seasoning and bring to the boil then simmer for 15-20 minutes.
Heat oven to 200C/180C fan/gas 6.
Boil a pan of water and cook the pasta for 10-11 minutes until tender.
Drain well then mix with the crème fraiche.
Place the meat mixture in a baking dish, pour over the pasta and top with the mozzarella and grated Parmesan.
Bake for 15 minutes until golden and bubbling.
