Instructions

In a microwave-safe bowl, heat 120 ml of cream for one minute.

Stir in 175 g of chocolate chips and let the mixture sit for five minutes to allow the chocolate to melt.

Once the chocolate is melted, whisk the chocolate and cream together until smooth. Set this aside to cool while you prepare the remaining cream.

Pour 240 ml of cold cream into a medium bowl. Using an electric hand mixer or a whisk, beat the cream until soft peaks form.

Reserve 120 ml of this whipped cream in a small bowl and refrigerate it for topping the mousse later. Continue whipping the rest of the cream until stiff peaks form.

Gently fold the whipped cream into the cooled chocolate mixture in three parts, using a large spatula. Be careful not to over-mix; it's fine if some streaks of cream remain.

Spoon the chocolate mousse into four ramekins or cocktail glasses. Chill in the refrigerator for at least one hour, or up to four hours.

Before serving, top with the reserved whipped cream and, if desired, sprinkle with grated chocolate, chopped hazelnuts, or any other toppings of your preference.
