Berry trifles are one of the most favoured single-serve desserts in the summer, as they are easy to make and don’t need baking.

Gordon Ramsay takes the convenience of this quintessentially British treat to the next level with his “quick” recipe.

The superstar chef’s take on trifles only call for five simple ingredients you can easily get at any store, and yield four servings.

Gordon Ramsay's quick berry trifle recipe

Ingredients

  • 200g strawberries, hulled and quartered

  • 600g other mixed berries (e.g. blueberries, blackberries, raspberries)

  • Three tbsp caster sugar

  • 100g amaretti biscuits

  • 600ml good-quality ready-made vanilla custard, chilled

Instructions

In a non-stick skillet, gently simmer the berries and sugar for a few minutes until the fruit softens slightly.

Transfer the mixture to a bowl and let it cool completely. Once cool, use a slotted spoon to remove a portion of the fruit for topping and set it aside.

In a large bowl, gently crush the amaretti cookies using the end of a rolling pin. Reserve a handful of crumbs for later, and then spoon the remaining crushed cookies into a large glass bowl (or divide them among individual serving glasses if preferred).

Spoon half of the custard over the amaretti layer. Next, add half of the cooled fruit compote on top of the custard. Repeat these layers, finishing with a sprinkle of the reserved amaretti crumbs and the saved fruit on top for garnish.
