Jamie Oliver’s herb chicken traybake dinner is easy to make with five ingredients

This chicken traybake is a nutritious and healthy meal which can be prepared in only eight minutes before leaving it to cook in the oven.

It can often be difficult to decide what to make for dinner, but you can make something incredibly flavourful with only a handful of ingredients as long as you have the right recipe.

Jamie Oliver’s herby chicken traybake is a classic combination of garlic, rosemary and lemon to make a dinner which is both delicious and cheap to make.

This recipe only uses five ingredients, some of which you likely already have in your kitchen, so you do not have to have a huge shopping list the next time you go to the shops.

It is easy to prepare in under eight minutes before placing it in the oven to cook for 50 minutes, so overall it only takes roughly one hour to make.

This is a great dinner when you want something tasty but do not want to spend ages cooking as the oven does all the hard work for you, and everything is made in one tray so you can also save time on washing up with this simple meal.

How to make Jamie Oliver’s herby chicken traybake

Ingredients

  • 400g of potatoes
  • Two (200g each) chicken legs
  • Six cloves of garlic
  • Two sprigs of fresh rosemary
  • One lemon (zest and juice)

Kitchen essentials needed: 

  • Roasting tray
  • Olive oil
  • Salt and pepper

Method 

Preheat the oven to 180C or Gas Mark 4. Wash the potatoes and thickly slice them, then place them in a roasting tray.

Place the chicken legs on top of the potatoes in the roasting tray along with half a tablespoon of olive oil and a pinch of salt and pepper.

Lightly squash the unpeeled garlic cloves and add them to the tray. Toss everything to make sure it is evenly coated in the oil and then arrange the potato slices nearly in an even layer.

Sit the chicken directly on the bars of the oven with the tray of potatoes and garlic directly underneath. Then bake in the oven for 40 minutes.

Once the time is up, mix the tomatoes with the tasty chicken juices and then sit the chicken on top. Strip the rosemary leaves off the sprigs and add strips of lemon zest to the tray, then toss everything in one teaspoon of olive oil.

Squeeze half the lemon juice into the tray over the chicken and return to the oven for 10 more minutes until the chicken is tender and golden.

Take out the oven, squeeze the garlic out of its skin and mix it well in the tray, and your delicious chicken bake is now ready to serve.
