Meghan Markle’s ‘simple’ salad recipe that ‘tastes like summer’

We may be the in dark depths of winter, but this salad recipe promises to remind your tastebuds what summer tastes like.
Meghan Markle sang the praises of Darling Magazine in 2015 and shared her favorite salad recipe of theirs ahead of a collaboration between the two.
The Suits actress bills the "simple salad" – a mix of vegetables, grains, fruits, and seeds – as a dish that strikes the perfect balance between "earthy" and "sweet."

Meghan Markle's salad recipe
Ingredients
Dressing
- 1 naval orange, juiced
- 3 fresh basil leaves, chopped
- 3 gm herb salt
- 3 gm fresh ground pepper
- Zest of orange
Salad
- 200 gm farro
- 45 g dried peaches, chopped
- 1 green apple, chopped
- 75 g pistachios, shelled and toasted
- 28.4 g butter, raw or unsalted
- Handful of baby argula

Instructions
Dressing
- Place orange juice, zest, basil leaves, salt and pepper in a small bowl.
- Whisk until well combined
Salad
- Place butter in a medium-sized pot over medium heat.
- Add farro and toast for about 5 minutes.
- Add water then cover with lid. Reduce to low heat and simmer for about 25 minutes or until the water has completely absorbed and the farro is soft and chewy.
- Meanwhile, toast the pistachios by placing them in a cast iron skillet over medium heat for about 5 minutes, stirring occasionally. Remove from heat once edges are roasted.
- Place the dried peaches, apple, pistachios, and arugula in a large bowl and add the farrow once it has cooled slightly.
- Dress the salad by adding a touch of dressing at a time.
