Meghan Markle’s go-to pasta recipe is 'so easy' she can 'make it with her eyes closed'
Meghan Markle shared her favourite go-to easy recipe, which is a simple pasta dish that only requires three main ingredients. Here's how to make it yourself.
Before she became a Royal, Meghan Markle ran her own lifestyle and food blog.
The California girl has shared tons of recipes, from slow-cooked apple toast to acai bowls, however, she told Eyeswoon that her go-to is cacio e pepe.
She said the pasta recipe is "so easy" that she could "make it with her eyes closed."
The Italian dish, which Bon Appetit calls a "stripped-down mac and cheese," only requires three main ingredients, making it the perfect low-effort dish to whip up in a pinch.

Ingredients
- 8 oz bucatini or spaghetti
- 2 tablespoons unsalted butter
- 1 cup finely grated Pecorino Romano cheese
- Freshly ground black pepper, to taste
- Salt, to taste

Instructions
1. In a large pot, bring 2 quarts of water and 1 teaspoon of salt to a boil.
2. Add the pasta and cook according to package instructions, until al dente. Reserve cup of the pasta cooking water and drain.
3. Set the same pot over low heat and melt the butter.
4. Add the pepper and cook, stirring constantly, until fragrant, for about 1 minute.
5. Add the drained pasta to the pot and toss to coat evenly. Remove the pot from the heat.
6. Slowly add cheese, mixing and incorporating into pasta. Add pasta water as needed to blend, until smooth and creamy.
7. Top with extra grated cheese and pepper, if desired.
