Mourinho sprung into action to beat rival Louis van Gaal to the signing of the 28-year-old Spain international.
The Blues boss is also pursuing a move for £40m-rated Everton defender Stones and could swoop for Juventus ace Pogba.
Chelsea have seen three bids rejected by the Toffees for Stones, the last worth £30m.

And the Stamford Bridge club have accepted it may take a British record fee to land the 21-year-old.
Pogba could also be on his way to Chelsea if the bookmakers are to believed, having slashed odds on the move from 7/1 to 6/4.
Reports in Italy suggest Pogba could be part of a swap deal with Juventus involving unwanted winger Juan Cuadrado.
