Chelsea signed Cahill from Bolton for a nominal fee of £7million back in 2011.
The 33-year-old has made 289 appearances for the club in that time, winning every major trophy at least once along the way.
The ex-England defender has made just one Premier League appearances under Sarri this season, and he has not held back in his opinion of the Italian.
"I see some of the situations with players who won the title with Chelsea, not just myself, and it just hasn't been right,” Cahill told the Telegraph.
“It makes it very hard for me to have respect for someone who has not respected what some of us have won with the club."
Sarri joined the club after Antonio Conte parted ways with the club after their FA Cup triumph last season.
It quickly became clear that Cahill wouldn’t be playing a prominent role under the 60-year-old, with the defender essentially wasting a season on the bench.
"It's been really terrible for me personally," Cahill said as his contract approaches completion.
"It will just be erased out of my head when I leave Chelsea.
“My last memory will be last season's FA Cup final [where Chelsea beat Manchester United 1-0].
"It's been very difficult.
“I have played on a regular basis over the previous six seasons and I've won everything with Chelsea, so to be watching from the stands is something I didn't expect.
Chelsea: Sarri is ‘not the right man for the job’ says Burley
“I know how the whole club works, I've got a big relationship with all the players and staff, and yet none of that has been utilised."
Sarri's team selections have come under fire form fans throughout the campaign, and Cahill is not happy with the lack of communication from the boss.
"If you are not playing a player, any player, for two, three, four games, then you don't have to give a reason for that.
“But if it gets to eight or nine games, then you have to explain the situation. What's going on? But the manager hasn't done that."
