Christmas Day stuffing recipe: The ingredients are mixed together in a bowl
APRICOT AND APPLE STUFFING
Ingredients
1 large onion, diced
200g celery (string removed) diced
50g butter
3 sage leaves chopped
50g honey pecans, roughly chopped
120 dried apricot chopped
200g fresh white breadcrumb
400g sausage meat (VENISON MEAT OR TURKEY LIVERS)
1 egg

Method
Fry onions and celery in the butter. Allow to cool.
Stir in the nuts, add apricots, sage, breadcrumbs, sausage meat and apple.
Mix in the egg and season.
Roll into balls.
Put the balls in a baking tray and bake for 30 mins until golden, alternatively place the stuffing in between the meat and the skin. ie the breast and neck end.
