Quentão

Ingredients
Quentão :
- ●700ml Ypióca Prata
- ●300g caster sugar
- ●375ml water
- ●60g root ginger
- ●2 limes, sliced
- ●1 orange, sliced
- ●2 cinnamon sticks
- ●4 cloves
Method
Dissolve sugar in water over medium heat, add all ingredients (not cachaça) and simmer for 20 minutes, remove from heat and add Ypióca.
Bring to boil for a few seconds, serve in a sharing bowl with orange slice garnish and dust with caster sugar if desired.
Ypioca Fizz

Ingredients
Ypioca Fizz:
- ●40ml Ypióca Prata
- ●20ml lemon juice
- ●25ml syrup of choice
- ●1 egg white
- ●25ml Half and Half, (milk and double cream)
To top:
- ● soda
Method
Mix all ingredients and dry shake in a Boston cocktail shaker.
Add ice and keep shaking, pour into a chilled highball glass and top with soda.
Garnish with lemon peel.

Por Amor:
- ●40ml Ypióca Prata
- ●25ml pear purée
- ●50ml cloudy apple juice
- ●20ml cinammon syrup
Method
Blend the pears to create a pear purée.
Muddle the purée with the apple juice and cinnamon syrup in a rocks glass.
Add Ypióca and ice cubes.
Churn to chill and dilute.
Garnish with a pear fan.
Bossa Nova

Bossa Nova:
- ●50ml Ypióca Prata
- ●20ml Lillet Blanc
- ●20ml Limoncello Di Capri
To top:
- ● soda
Method
Build all ingredients into a highball glass over ice.
Top with soda.
Garnish with a lemon twist.
Bloody Carioca

Bloody Carioca:
- ●50ml Ypióca Prata
- ●100ml tomato juice
- ●20ml passion fruit pulp
- ●20ml lemon juice
- ●15ml Bloody Mary mix
Method
Mix all ingredients in a Boston cocktail shaker with ice.
Pour into a highball glass.
Fill with ice.
Garnish with a basil leaf.
