Peach cobbler
THIS traditional American dessert features delicious fresh peaches baked under a biscuit-like topping. Serve warm with some cold ice cream or cream for the perfect summer pudding. Serves 8.
INGREDIENTS
8 fresh peaches, peeled, stoned and cut into slices
110g butter
110 brown soft sugar
250g plain fl our
400g caster sugar
2 teaspoon baking powder
1 teaspoon salt
2 egg, beaten
250ml vegetable oil
1 teaspoon ground cinnamon
METHOD
1) Preheat the oven to 180C/160C fan/gas 4 and grease a baking tin with cooking oil.
2) Arrange the peach slices on the bottom of the baking tin. Break the butter into small pieces and scatter over the peaches, sprinkle the sugar over and set aside.
3) In a separate bowl, mix caster sugar, baking powder and salt.
4) Combine the beaten eggs with the vegetable oil then stir into the dry ingredients to make a batter.
Pour it over the peaches and finish with a sprinkling of ground cinnamon.
5) Bake in the oven for approximately 45 minutes until the top is golden brown. Spoon into dessert bowls and serve immediately with cream or ice cream.
