Curried chicken and rice salad
Serves 2 - 280 calories/3.5g fat/0.8g saturated fat
Ingredients
75g (3oz) brown basmati rice
140g (5oz) ready-prepared chicken tikka, diced
4 spring onions, finely sliced
25g (1oz) ready-to-eat dried apricots, thinly sliced
125g (4½oz) cherry tomatoes, cut in half
2 tbsps chopped fresh chives
Salt and freshly ground pepper
Method
Cook the rice according to the packet's instructions then drain well and allow to cool.
Transfer the rice to a serving bowl, stir in the rest of the ingredients, season to taste and serve immediately.
