Roasted potatoes with garlic and parmesan
A SIMPLE recipe that makes a great side dish to accompany almost any meal. Most types of potato will do, although red is preferable. Serves 4.
INGREDIENTS
700g potatoes, cubed
Non-stick cooking spray
3 tablespoons olive oil
3 cloves garlic, minced
2 teaspoons dried parsley flakes
40g grated parmesan cheese
Salt and pepper to taste
METHOD
1) Preheat oven to 200C/180C fan/gas 6.
2) Spray a 9x13 inch glass baking dish with non-stick cooking spray.
3) Arrange potatoes in dish and drizzle with olive oil.
4) Sprinkle with garlic, parsley fl akes, parmesan and salt and pepper, and toss to coat evenly.
5) Bake for 25-30 minutes, or until potatoes are tender, stirring once halfway through.
