Bacon spaghetti with courgette, lemon, basil and dill
EASY and quick to make, this recipe is a great way to use up those store cupboard essentials. Serves 2.
INGREDIENTS
225g Wiltshire cured smoked back bacon
rashers, roughly chopped
225g dried spaghetti
15ml olive oil
2 courgettes, grated
1/2 lemon, juice and rind
30ml fresh basil, roughly chopped
30ml fresh dill, roughly chopped
Black pepper

METHOD
1) Cook spaghetti in a pan of boiling water as per pack instructions. Meanwhile put olive oil into a pan, add the bacon and lightly cook.
2) Add the courgettes and cook for a further 1-2 minutes. Add the lemon juice with rind, followed with the herbs.
3) Add the mixture to the drained spaghetti and serve straight away scattered
