Classic creme brulee
A FOOLPROOF recipe for this popular desert which is guaranteed to put a smile on any diner’s face. Serves 2.
INGREDIENTS
100ml milk
100ml double cream
1 teaspoon vanilla paste (or seeds
from one small vanilla pod)
3 dessertspoons of sugar
2 eggs
3 dessertspoons of sugar
2-4 dessertspoons of sugar
for topping
METHOD
1) Preheat oven to 150°C/130°C fan/gas mark 2.
2) Make custard by heating milk, cream, vanilla and three dessertspoons of sugar in a saucepan, whisking until blended. Slowly bring to boil.
3) While custard is heating up, lightly whisk eggs and three dessertspoons of sugar in a bowl until smooth.
4) Take milk mixture off heat as soon as it boils and, whisking all the time, add to eggs.

5) Sieve mixture into a jug and pour custard into ramekins.
6) Place in bain-marie and cook in oven for 30 minutes.
Allow to cool.
7) Top each ramekin with a flat dessertspoon of sugar and use a blowtorch to caramelise
