Marinated mushrooms with herb and garlic bread
MUSHROOMS contain vegetable proteins, iron, fibre, essential amino acids, vitamins and minerals, which has led people not only to enjoy their taste but also to use them for medicinal purposes. Serves 4.
INGREDIENTS
750g small brown or white mushrooms
200ml extra virgin olive oil
3 tablespoons white balsamic vinegar
2 tablespoons dried mixed herbs
Salt
Black pepper
1-2 teaspoons sugar
2 garlic cloves
125g butter
Freshly ground chilli
1 ciabatta
METHOD
1) Wash the mushrooms and cut larger ones in half. Sautee the mushrooms in 1-2 tablespoons of hot oil, then leave to cool.
2) Mix the remaining oil, vinegar, 1 tablespoon of mixed herbs, salt, pepper and sugar and add to the mushrooms. Place the mushrooms in a bowl and refrigerate overnight.

3) Peel the garlic, crush and mix together with soft butter, 1 tablespoon of mixed herbs, salt and chilli.
4) With a bread knife, cut slits in to the ciabatta roughly every 1.5cm – however, do not cut right the way through the bread. Spread the herb butter in each cut.
5) Wrap in aluminium foil and bake in the oven for 15 minutes at 200C/180C fan/gas 6, then open foil and leave for a further 5-10 minutes until crispy brown. Serve with the mushrooms and enjoy with a glass of red wine.
