Vegetable madras with red lentils
THIS is a rich and hearty lentil curry which is great for vegetarians or just to help you get your five a day and it tastes great.
Serves six.
INGREDIENTS
1 tablespoon sunflower oil
1 large onion, peeled and thinly sliced
500g butternut squash, peeled and cut into chunks
1 jar Kanpur Garden Madras sauce
25g split red lentils
1 cauliflower, cut into florets
150g green beans, trimmed
METHOD
1) Heat the oil in a large pan and fry the onion until softened. Add the butternut squash and fry for three to four minutes.
2) Pour over the madras sauce, then fill the jar with boiling water and add to the pan.

3) Stir in the lentils and bring to the boil. Boil for 10 minutes then add the cauliflower and simmer for five minutes, adding extra water if the mixture gets too dry.
4) Add the green beans and simmer for a further five minutes. Serve with rice or naan bread.
