Lentil and pasta soup
THIS soup is not only delicious but also very nutritious. You can enjoy this as a healthy snack or starter to your meal. Youngsters will defi nitely enjoy the fl avour of this mouthwatering soup What’s more, it is really easy to prepare and does not involve any complicated procedure. Serves 4.
INGREDIENTS
400ml chicken broth
400ml water
100g dry lentils, rinsed
400g tin whole tomatoes, chopped
and with their juice
145ml tomato paste
1/2 tablespoon sugar or brown sugar
100g carrots, sliced
100g celery, chopped
140g Italian green beans, frozen
1 medium onion, chopped
2 cloves garlic, minced
100g fusilli pasta, uncooked
1 bay leaf
Pinch of each, basil, oregano,
thyme, marjoram, black pepper
25ml wine vinegar
METHOD
1) In a pot combine broth, water, lentils, tomatoes, tomato paste, brown sugar, vegetables and garlic.
2) Bring to a boil; lower heat.
3) Cover the pot and simmer for 25-35 minutes.
4) Add about 1 more cup of water, the pasta, bay leaf, spices and vinegar and simmer for about 20 minutes more.
5) Remove bay leaf and serve.
