Carrots will taste 'out of this world' if you add 1 unusual spice

The spice is likely to be found in most UK kitchens and gives carrots a rather special taste.

Carrots are one of the most popular and versatile vegetables around. The can be transferred into just about anything, including hearty soups, smooth purées and extravagant side dishes. But according to some food experts and home cooks, there’s one unusual spice that takes their flavour to a whole new level, and it’s already in most kitchen cupboards.

Curry powder might not be the first thing you think to pair with carrots, but food blog Minimalist Baker says it’s a game-changer. In a post about “curry roasted carrots with peanut sauce”, the recipe creator wrote: “These aren’t your mum’s carrots. No offense to your mum or her maple-glazed carrot sticks, but these are a whole different ball game.”

The blogger added: “These roasted carrots take on a similar softness but are slightly more savoury than sweet.

“That’s because I doused them in curry powder - one of my new favourite spice blends. The sweet comes from the carrot’s natural flavour and homemade peanut sauce. Such a brilliant combination.”

The dish, which mixes Indian and Thai flavours, can be eaten on its own or as a side for dishes like grilled chicken.

Similar ideas have also taken off online. There is one Reddit thread that’s dedicated just to carrots, where users are discussing carrot recipes.

One person mentioned curry powder and plenty of opinions followed.

One user wrote: “Everyone needs to try it. The carrots take on a completely different flavour and taste out of this world.”

Another added: “I wasn't convinced at first because I didn’t think carrots would pair well with curry powder. But I was mistaken and my mind was blown.”

A third said: “This might sound weird at first but please try it before spreading hate. It’s now one of my family’s favourite side dishes and my six-year-old wants to eat it every day. The carrots really are delicious.”

Not everyone agreed, though. One person commented: “I love the taste of carrots but the curry powder is way overpowering. It’s like eating carrot curry. Not for me.”

Another added: “I wasn’t a big fan. The flavour was too strong.”

Still, the recipe is quick, simple and only takes about 30 minutes from start to finish. If you’re curious to try it, here’s how it’s done.

Minimalist Baker’s Curry Roasted Carrots with Peanut Sauce - serves 2

Ingredients:

  • 1 medium bunch of carrots (rinsed, scrubbed, tops removed, halved if large – around 8 carrots)
  • 15–30ml melted coconut oil (or substitute olive/avocado oil)
  • 2 tsp curry powder
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper
  • 263g cooked millet (ideally in vegetable stock for flavour)
  • Peanut sauce (homemade or store-bought)

Optional toppings:

  • Sriracha
  • Minced basil or coriander
  • Crushed peanuts
  • Lime juice

Method:

  1. Preheat the oven to 204C (400F).
  2. Place carrots on a baking tray. Toss with oil, salt, pepper and curry powder.
  3. Roast for 20–25 minutes, flipping halfway, until tender and browned.
  4. Meanwhile, prepare the peanut sauce.
  5. Serve carrots over millet and drizzle with sauce. Add optional toppings as desired.
