One-pot tomato orzo recipe is the ‘perfect’ family midweek dinner - ready in 30 minutes

One-pot dishes require little effort, with minimal washing up and easy cooking, perfect for busy families.

This tomato orzo recipe from BBC Good Food has 10 five-star ratings and is on the table in under 30 minutes.

The recipe notes said: “Have a glut of tomatoes? Put them to good use in this one-pan orzo dish, perfect for a family midweek dinner.”

Finish the dish with fresh parsley and plenty of parmesan for a delectable but simple dinner.

This recipe serves four people, and if you don’t have fresh tomatoes, a can of chopped ones will also work.

Ingredients:

One tablespoon of olive oil

One red onion, finely chopped

Two garlic cloves, finely grated

One chilli, deseeded and finely chopped

600g tomatoes, chopped

400g orzo

800ml vegetable stock

Handful of parsley, roughly chopped

Grated parmesan

Method:

Start by heating the oil in a large saucepan or frying pan over medium heat before adding the onions for four to six minutes.

Add the garlic and chilli, cooking them for one further minute to soften.

Stir in the tomatoes and cook for around five minutes until they start to break down.

Stir in the orzo, then pour in the stock. Cook for eight to 10 minutes until the liquid has reduced and the orzo is tender.

If it starts to dry out, it’s recommended to add a few tablespoons of water to loosen it up.

Scatter in three-quarters of the parsley and stir this through before serving it in bowls.

Add the remaining parsley and a generous helping of grated parmesan before enjoying with the family.
