One-pan baked salmon dish with crispy potatoes is ‘delicious’ and ready in one hour

Baked salmon is a delicious and healthy dinner option, and it's super simple with this one-pan recipe.

One-pan recipes are super convenient, and easy for after you’ve had a busy day.

All the ingredients can be chucked into the same dish, which also means there’s very little to wash up.

The recipe notes from BBC Good Food said: “This delicious baked salmon dinner takes less than an hour to cook from start to finish.

“As it’s a traybake most of that is letting the oven work its magic.

“Switch the veggies depending on what’s in season, add some French beans, sliced fennel or courgettes if you prefer.”

Ingredients:

650g small Maris piper potatoes, cut into 3cm chunks

Two to three tablespoons of olive oil

One large garlic clove, sliced

Six spring onions, cut into 3cm lengths

200g tenderstem broccoli, cut into 5cm lengths

12 cherry tomatoes

Four 150g salmon fillets

Two tablespoons of chopped fresh flat-leaf parsley

One tablespoon of chopped fresh dill

Two tablespoons of capers, chopped

Three tablespoons of extra virgin olive oil

Half an unwaxed lemon, zest and juice only

Salt and freshly ground black pepper

Method:

Preheat the oven to 200C or 180C Fan and place the potatoes in a large roasting tin.

Drizzle with two tablespoons of olive oil and then season with salt and pepper before roasting for 30 minutes.

Turn the potatoes over, then add the garlic and spring onions, cooking for a further 10 minutes.

Remove the tin from the oven and add the broccoli and tomatoes, stirring to coat in the hot oil.

Make four spaces among the vegetables and place each salmon fillet, drizzling with a little olive oil and seasoning well.

Roast for a further 10 to 15 minutes until it’s cooked through and the vegetables are soft.

Meanwhile combine the herbs, capers, olive oil, lemon juice and zest in a small bowl and season with salt and pepper.

Drizzle the herby dressing over the salmon and vegetables before serving straight away.
