Easy carrot cake recipe that's ‘flavourful and moist’ cooks in 25 minutes without an oven

The wonderful spice blend in this sweet carrot cake makes this the perfect dessert for carrot cake lovers and you don't need to turn on your oven for it.

Recipes for carrot cake often tend to be a little tricky to follow and take a long time to bake.

But if you follow Becky Abbott of Air Frying Foodie blog's recipe, you can have “delicious carrot cake in no time without heating up the kitchen” as she recommends using an air fryer instead of the oven.

Becky said: “This classic carrot cake recipe makes a flavourful and moist cake, in just 25 minutes in the air fryer.”

While this recipe doesn’t include your typical raisins or sultanas, they can be added as an optional extra.

With a serving of eight, this cake takes just five minutes to prep and 25 minutes to cook.

Ingredients 

One cup all purpose flour

One teaspoon baking soda

One teaspoon ground cinnamon

Half a teaspoon ground nutmeg

Half a cup vegetable oil or canola oil

One quarter cup orange juice

Half a cup sugar

Half a cup brown sugar

One teaspoon vanilla

Two large eggs

One and a half cups carrots peeled and grated

Method

In a medium-sized bowl, start by combining the dry ingredients - flour, baking soda, cinnamon, and nutmeg, then set aside.

In a large mixing bowl, whisk or beat together the sugar, brown sugar, eggs, and teaspoon of vanilla extract. Once combined, add the oil and orange juice, then slowly add in the dry mixture, until well combined.

Scrape the sides of the bowl to make sure all ingredients are incorporated, then mix on medium speed until you have a smooth batter.

Next, fold in the shredded carrot, and if using, add half a cup of walnuts, a quarter cup of raisins or optional shredded coconut. Continue to stir until all ingredients are well combined.

Then prepare an eight-inch round cake pan, by lining the bottom of the pan with a circle of parchment paper. Then lightly spray, grease, or butter the sides of the pan.

Afterwards, pour the carrot cake batter into a lightly greased or lined cake pan, set your air fryer to 160 degrees and air fry for 20 minutes.

Cover the cake with foil, and then continue to air fry for an additional five minutes, until a toothpick comes out clean when inserted into the centre of the cake.

Allow the prepared cake to cool on a wire rack completely before frosting the cake with cream cheese frosting.
