Ingredients

175g self-raising flour, plus extra for dusting

½ tsp baking powder

50g butter, cut into small cubes

Two tbsp caster sugar

½ tsp vanilla extract

90ml buttermilk or milk

milk, to glaze

jam and clotted cream, to serve

Instructions

Preheat the air-fryer to 180°C. In a bowl, mix the flour and baking powder with a pinch of salt. Use your fingertips to rub the butter into the dry ingredients until the mixture resembles coarse breadcrumbs. Alternatively, you can achieve this by pulsing the mixture in a food processor.

Add the sugar to the flour mixture and stir to combine. In a separate bowl or jug, blend the vanilla with the buttermilk or milk. Gradually mix this liquid into the flour mixture until a soft dough forms.

Lightly flour your work surface and transfer the dough onto it.

Shape the dough into a ball, then gently flatten it to about four to five cm in thickness. Use a five cm round cutter to cut out scones. You may need to cut out a few scones initially, then rework the remaining dough to cut out additional scones.

Place the scones in the air-fryer basket, brush them lightly with milk, and bake for 14-18 minutes, or until they are golden brown and risen.

Store the scones in an airtight container for up to three days.

To soften them, warm them in the microwave for 30 seconds before serving.

Enjoy with jam and clotted cream and accompanied by a cup of your preferred tea.
