The Fourth of July is an American holiday that has been enjoyed since 1776 - the time when America became independent from Great Britain.

On July 4, 1776, the Second Continental Congress unanimously adopted the Declaration of Independence.

Best celebrated with family and friends, getting together for a tasty meal is one of the easiest ways to commemorate Independence Day.

One of the most favoured meats for the holiday is chicken, which is why butterflied grilled chicken drumsticks are going to be a big hit for meat lovers.

For the perfect blend of spicy, smoky, and sweet, here's the Delish recipe for butterflied grilled chicken.

Grilled chicken drumsticks

  • Serves: four people
  • Prep: 15 minutes
  • Total time: 30 minutes

Ingredients:

  • 1.3kg whole chicken drumsticks
  • One tbsp chilli powder
  • One tbsp dark brown sugar
  • One tbsp salt
  • One-and-a-half tsp onion powder
  • One tsp dried thyme
  • One tsp black pepper
  • One tsp garlic powder
  • One tsp smoked paprika
  • Half tsp cayenne pepper
  • One tbsp canola oil
  • Alabama white sauce, for serving

Alabama white sauce

Ingredients:

  • One and one-third cup of mayonnaise
  • One-third cup of apple cider vinegar
  • One tbsp of Dijon mustard
  • One tbsp Worcestershire
  • Two tsp granulated sugar
  • One-and-a-half tsp black pepper
  • One tsp salt
  • Three-quarters tsp of granulated garlic, optional

Alabama white sauce method

In a medium bowl, whisk mayonnaise, vinegar, mustard, Worcestershire, granulated sugar, pepper, salt, and garlic powder (if using) to combine. Set aside.

Heat a grill pan over medium heat and preheat the oven to 350°C. Pat drumsticks dry with paper towels.

Butterfly the chicken

With a sharp knife, using a gentle swiping motion, cut through the meat and expose the bone. Now separate more of the flesh from the top of bone, until leg opens up (like a butterfly).

In a small bowl, whisk chilli powder, brown sugar, salt, onion powder, thyme, black pepper, garlic powder, paprika, and cayenne until combined. Add oil and mix until a paste forms. Rub the seasoning paste all over drumsticks.

Arrange drumsticks skin side up on the grill pan. Cook for three to four minutes. Turn chicken and and continue to grill until skin side is charred in three to four minutes.

Place grill pan in oven and bake until chicken is cooked through, 10 to 12 minutes more. Transfer chicken to a platter. Let rest for five minutes and serve with Alabama white sauce.
