'Wonderfully British' mashed potato recipe uses 'game-changing' tip for 'luxurious' dish

Mashed potatoes add something a little special to the traditional Sunday roast, but are equally as enjoyable as a side dish or a base for dishes such as sausages and mash. According to Chef Thom Bateman, they are a "wonderfully British" staple. Thom Bateman is a chef and restaurant owner who shared his cooking tips and tricks on TikTok.
He showed fans how to make "luxurious" and "smooth" mashed potatoes in five steps.

These are not your usual mashed potatoes, but a much creamier version which makes use of heavy cream, butter, garlic and herbs.
For his recipe, Thomas recommends using Maris piper potatoes. Maris Piper has a fluffy texture and is considered an "all-rounder" potato.
You can purchase a bag of British Maris Pipers from Sainsbury's for £2.00 at the time of writing.
The chef also boils the potatoes in vegetable stock, rather than just water. This is a method which viewers of the video have described as "game-changing". One commenter wrote: "Cooking your potatoes in stock is genuinely game-changing."
Thom then uses butter and cream, infused with garlic and herbs, to combine with the potatoes for a smooth consistency.
Though the final product is restaurant quality, the recipe is actually completed in just a few steps.

How to make Chef Thom's 'wonderfully British' mashed potatoes
Ingredients
- 1kg of Maris piper potatoes
- Vegetable stock
- 100g butter
- Two sprigs of thyme
- Four garlic cloves
- Two sprigs rosemary
- 100ml of double cream or heavy cream
- 100ml of whole milk
- Salt and pepper
Method
Step one: Peel the potatoes and boil them in vegetable stock until tender.
Step two: Thom explained: "Then we are going to infuse the butter, milk and cream with garlic and herbs over low heat."
Step three: Once your potatoes are fork-tender, you can begin to mash them. Thom added: While the potatoes are still hot pass them through a ricer and even through a sieve if you want them even smoother."
Step four: Once your potatoes have reached the desired consistency, it's time to make them extra creamy. Thom said: "Pour in your buttercream mix until you get a lovely, luxurious, smooth and delicious mashed potato."
Step five: Season with salt and pepper to taste, and then serve.
