Using seasonal vegetables, this asparagus risotto recipe from Great British Chef's is made with asparagus stock and purée ensures as well as a "burst" of lemon zest, creating a "unique flavour" perfect for spring time supper.

Ingredients
- 1 2/3 lb of asparagus
- 1 pinch of bicarbonate of soda
- vegetable oil, for frying
- 1 large onion, diced
- 3 garlic cloves, sliced
- 10 2/3 oz of carnaroli risotto rice, or arborio rice
- 6 3/4 fl oz of white wine
- 3 1/2 oz of butter
- 1 3/4 oz of Parmesan, or a vegetarian alternative
- 1 lemon, zested and juiced
- flaky sea salt
- pepper
