Try sweet and savoury maple breakfast tacos for a different morning meal

Maple breakfast tacos offer a mix of sweet and savoury flavours. It sees tortillas, fried eggs, kidney beans and topped with a hint of maple syrup and green chilli sauce.
This is how to make maple breakfast tacos.
For the maple syrup and green chilli sauce:
- 2 green peppers
- 8 green chillies
- 10g coriander
- 2 kiwi fruit
- 1 garlic clove
- 13g grated ginger
- 2 limes, juiced
- 120ml pure maple syrup
- 4 tortillas
- 4 fried eggs
- 2 tbsp olive oil
- 1 red onion, sliced
- 4 chopped tomatoes
- 2 garlic cloves, crushed
- 1 tbsp pure maple syrup
- 1 can of kidney beans
- salt and pepper, to taste
- 1 tbsp chopped coriander
- 1 bag rocket salad
- 1 lime, cut into wedges

Firstly, to make the maple syrup and green chilli sauce you can put all the ingredients together but leave out the maple syrup. Then put them all into a blender to turn it into a chunky sauce.
Add the sauce into a shallow saucepan, then add the maple syrup and 100ml water. Bring this to a simmer for around 15 minutes. Only stir occasionally until the sauce becomes syrupy.
Try not to burn the sauce and continue to simmer. Continue to stir it constantly for 5 more minutes and until it has reduced.
Add the sauce into a sterilised jar.
Next, for the tomato sauce, add some olive oil to a saucepan on medium heat. Then, add the onion and cook until it's clear.
Then add the chopped tomatoes, garlic and maple syrup.
Cook this for 5 minutes and add the kidney beans. Season with salt and pepper. For the tacos, preheat them in the oven to 180°C. Cook for 5 minutes or until they are crispy.
Assemble the tacos by putting 3 tbsp of tomato sauce on each taco. Top them each with a fried egg 1 tsp of maple syrup and green chilli sauce. You can garnish them with chopped coriander, rocket and lime wedges.
