Rick Stein's Spanish Christmas
RICK Stein believes that no one celebrates Christmas in greater style than the Spanish, whose festivities last more than a fortnight.
He cooks up a Christmas feast with the help of friends Jose Pizzaro (above left, with Stein) and Maria Jose Sevilla.
The menu includes clams with serrano ham and oloroso sherry, lamb-stuffed aubergines with Moorish spices, chicken with saffron and pine nuts and orange caramel creams.
