Monica Galetti shares her top tips on how to make the best stuffing:
1. Always use good quality organic sausages and organic bread where possible.
2. Cook the stuffing separately and stuff it while the turkey is resting. Stuffing is extremely porous, as the turkey around it cooks, juices that may contain salmonella bacteria soak into the stuffing, which then needs to be cooked up to 75?C in order to be safe – this will cause the turkey to be overcooked.
3. Preparing stuffing beforehand allows the flavours to really develop.
4. Try cooking your stuffing in a loaf tin – it doesn’t dry out and will give it a nice crispy top.
