Crisp salad with honey and garlic dressing
Serves four as a starter or light lunch For the salad:
Ingredients
200g (7oz) chicory
200g (7oz) radiccio Handful of rocket Edible flowers, to garnish
For the dressing:
2 garlic cloves, peeled
2 tbsps extra-virgin olive oil
50g (2oz) thick, dark honey
1 tbsp cider vinegar
Sea salt and freshly ground black pepper
Method
Roughly chop the salad and place in a large bowl.
Put the garlic through a press or crush and chop finely. Put the olive oil and garlic in a small pan then warm until the garlic just starts to sizzle. Remove from the heat and cool.
Mix with the honey and vinegar then season. Whisk until mixed and toss into the salad. Garnish with flowers.
