Danish pastry strudel
DANISH pastry strudel is brilliant for brunch and makes the perfect treat this Valentine's Day. Serves 4.
INGREDIENTS
1x320g (11oz) sheet of puff pastry
1 green apple
1 red apple 200ml
(7fl oz) shop-bought custard
1 egg, beaten
2 tbsps demerera sugar

METHOD
• Preheat the oven to 200°C/400°F/gas 6.
• Line a flat baking tray with baking parchment. Cut the pastry into 4 squares, about 10x10cm (4x4in).
• Core the apples, cut each in half and cut into thin slices. Place a good dessertspoon of custard in the centre of each pastry square. Arrange the apple slices on top of the custard.
• Fold two opposing corners of each square to slightly overlap in the middle, above the apple slices. Secure the corners of the overlapping pastry with a toothpick. Brush each pastry with the beaten egg and sprinkle with sugar. Bake for 15 minutes or until golden brown.
• Remove from the oven and allow them to cool for 5 minutes. Remove the cocktail sticks and either serve warm with a little cream or serve cold as they are, with fresh coffee.
