Lamb steaks with olive and potato mash
LAMB is a fantastic source of protein, zinc and iron. This easy-to-follow recipe delivers your very own home-made comfort food. Serves 4.
INGREDIENTS
1kg maris piper potatoes
Salt
600g lamb steaks
3 rosemary sprigs
50g black olives, destoned
2 garlic cloves
Pepper
Olive oil
100g sour cream
METHOD
1) Peel and dice the potatoes and cook in boiling, salted water until soft (20-25 minutes).
2) In the meantime rinse off and pat the steaks dry with a kitchen towel.
3) Roughly chop 2 sprigs of rosemary. Drain and slice the olives. Peel and chop the garlic cloves and mix with the rosemary. Rub the steaks with the rosemary and garlic blend and season with salt and pepper.
4) Heat a little oil and fry the steaks for 3-4 minutes on each side.
5) Drain the potatoes. Place in a bowl with a little more oil and the sour cream and mash. If you wish a smoother mash, blend in a little milk. Fold in the olive slices and season to taste.
6) Serve the mash with the steaks and decorate with the rest of the rosemary.
