I made a quick and easy sausage traybake that's perfect for midweek dinners

The fuss-free dinner is ideal for the whole family and is packed with flavour.

Getting dinner on the table during the week needs to be straightforward, quick and delicious - particularly in the summer months. It's all too easy to fall into the habit of serving up the same meals on rotation.

However, there's one go-to recipe that I rely on as a dependable dinner option. It's a simple sausage traybake that delivers far more flavour than the minimal effort it requires. The sausage, red onion, pesto and new potato traybake couldn't be easier, as everything goes into a single dish.

The oven does all the work, freeing you up to leave the kitchen. The sausages are succulent, while the new potatoes turn crispy after being flattened before roasting. It's a family favourite that ensures plenty of vegetables make it into one meal.

Since I first came across this traybake a couple of years ago, it's become a regular fixture, and it could easily become yours too once you've sampled it.

Ingredients for four people

  • Bag of new potatoes
  • Four garlic cloves, peeled
  • Eight sausages
  • One red onion, largely chopped
  • A glug of olive oil
  • Three tbsp pesto
  • 200g frozen peas
  • Salt and ground pepper for seasoning

Method

Pre-heat your oven to 220°C/200°C Fan.

Place the new potatoes into a saucepan of water. Bring to the boil and simmer for 10 minutes.

Drain the potatoes and transfer them to a large roasting dish. Gently press down on each potato using the base of a drinking glass.

Add the red onion, garlic and sausages across the tray, ensuring there's space for everything. I give my sausages a five-minute head start in the air fryer before adding them to the tray, though this step isn't essential.

Drizzle oil over the ingredients and season with salt and pepper. Place the tray in the oven for approximately 35 minutes, until the sausages are cooked through and the potatoes become golden and crispy.

Remove the tray from the oven and stir in the frozen peas along with the pesto. Combine everything thoroughly.

Return the tray to the oven for a further five minutes, until the peas are heated through. Serve and enjoy.
