Ali Martin is the founder of the recipe site Gimme Some Oven, and she shared her go-to recipe for jacket potatoes, a food she thinks everyone should be able to cook. She describes her baked potatoes as perfectly crispy and flavorful on the outside, and soft and fluffy on the inside. It takes just a few ingredients and a small number of minutes of active preparation.

But the results speak for themselves. To make her very best jacket potato, Ali uses:
- Russet potatoes
- Butter or olive oil
- Kosher salt
- Freshly ground black pepper
As you can see, she doesn't use anything out of the ordinary to make the best jacket potato. The secret lies in the method. There is an extra step she adds, and it makes all the difference.
About halfway through its cooking time, she removes the jacket potato from the oven and brushes it with butter or oil. Many people only do this at the start, but this added step in the middle of cooking really helps to get your jacket potato perfectly crispy on the outside.
To start, Ali heats the oven to 230C and prepares her baking sheet. You can place the potato on a sheet of baking paper. If you have a wire rack, you can place this over the baking paper and put the potato on top to make sure it cooks evenly all over.
Then, poke your potato all over with a fork and then put it into the oven to bake for around 25 minutes. After this time has passed, take the potato out of the oven and brush it with butter or oil.
You should also rub in some coarse Kosher salt to give it an extra crunch. Then, bake it for another 20 minutes. After that, it should be ready to cut open and topped with your favourite additions, such as sour cream, bacon or spring onions.
