Mum's 'ultimate' midweek comfort dish that's ready in 30 minutes costs £1.75 per portion
Recipe creator Amy Sheppard has shared her "ultimate mid-week comfort dish" - a sausage stew that's ready in just 30 minutes and costs only £1.75 per person.

With the arrival of colder weather, there's nothing quite like tucking into a hearty stew during the week. Recipe developer and food content creator Amy Sheppard, who runs @amysheppardfood, has revealed her "ultimate mid-week comfort dish" that's perfect for those pressed for time.
This stew puts a spin on the traditional sausage recipe, incorporating kale and beans to boost its nutritional value. Amy explained the meal is "ready in just 30 minutes" and "costs just £1.75 per person". She continued: "Each portion contains two of your five a day and is a great source of vitamins C and K, plus it's low in fat and high in protein." Whilst Amy's recipe features chicken sausages, these can easily be substituted with vegetarian alternatives or your preferred meat option

How to make Amy's kale, bean and sausage stew

Ingredients
- Vegetable oil for frying
- Two leeks finely sliced
- 250g bag of shredded kale
- 10 chicken chipolatas
- Two teaspoons of dried thyme
- Two cloves of garlic, finely chopped
- One and a half tablespoons of flour
- 750ml chicken stock
- 400g tin of butter or cannellini beans drained
- 200ml milk

Method
- Begin by heating a splash of oil in a large non-stick frying pan. Add the leek and kale, cooking for five minutes over a medium heat until the vegetables begin to soften.
- Transfer the vegetables from the pan and place to one side, then add slightly more oil to the same pan. Place the sausages in and cook for 10 minutes over a medium heat, ensuring they're turned frequently until golden brown throughout.
- Reintroduce the kale and leeks to the pan, along with the thyme, garlic and flour. Stir over heat for a minute until the flour has vanished.
- Gradually pour in the stock bit by bit, stirring constantly. Once all the stock is incorporated, add the beans and milk and season as per your preference.
- Allow it to simmer for five minutes on a low to medium heat before serving alongside baked or mashed potato or rice.
