Carrots are a go-to vegetable for many families, no matter the dinner. They’re tasty, nutritious, and so simple to make. Whether you like them simply boiled or roasted with herbs, they can be eaten with virtually any dinner. While most people opt to roast them with honey, Good Food has shared a better alternative that is even more delicious.

The recipe notes said: “Maple syrup brings an extra sweet edge to the carrots, making for an irresistible side-dish.” This recipe serves 10, making it perfect for a gathering or a Christmas Day dinner.

Roasted carrots recipe

Ingredients:

  • 1.3kg carrots
  • 50g butter
  • One tablespoon of maple syrup
  • One rounded tablespoon of wholegrain mustard

Method:

Peel and cut the carrots into batons. This can be done up to 24 hours in advance and stored in an airtight container in the refrigerator.

Tip them into a pan, pour enough boiling water to just cover, and then bring to a boil. Pop the lid on and cook for 4-5 minutes, or until tender. 

Meanwhile, put the butter and maple syrup in a small pan. Heat until the butter is melted, and then stir in the mustard.

Remove from the heat, and then drain the carrots, tipping them into a warmed serving dish.

Pour the warm maple glaze over the carrots, then taste and adjust the seasoning to suit.

This recipe doesn’t require oven roasting, which means it’s quick and simple.
